Savory Chili Recipe



Vegetarian Bean Chili
Number of Servings: 8

This Chili Recipe rates as follows on the Glycemic Index List:

2 servings of low Glycemic Index starchy foods;
1 serving of lean protein;
1 vegetable serving



 

Ingredients:

Cooking Oil 2 tbsp
Chopped onion 1 Medium
Carrot Sliced 1 Medium
Red Pepper, chopped 1 Large
Green Pepper, chopped 1 Large
Canned Kidney Beans, drained 1- 19 oz. can
Canned Pinto Beans, drained 1- 19 oz. can
Zucchini, chopped 1 Medium
Canned Stewed Tomatoes 28 oz. can
Cider Vinegar 1 tbsp
Brown Sugar, packed 1/4 cup
Chili Powder 2 tbsp
Sliced Mushrooms 1/4 pound
Garlic Minced 3 cloves
Salt 1 tsp
Pepper 1/4 tsp
Cumin 1 tsp

 

Directions:

Heat cooking oil in frying pan. Add onion, peppers, mushrooms, and zucchini. Sauté until onion is soft. While the vegetables are sautéing, add all the other ingredients to a big pot. Once vegetables are done, add to the pot. Simmer until done. Add meat if desired.
